Brandon and I returned this weekend from a crazy 9 day vacation that included a flight to DC, partying with old friends like we were in college again, celebrating our very good friends’ wedding on the Eastern Shore of Maryland, almost missing our flight back.. And THEN heading out for 4 days of camping in the remote Boundary Waters Canoe Area.
But I’m lazy (actually blogging from my phone right now. Such a bum) and haven’t uploaded or edited any photos whatsoever and I wanna share all the goods when I get around to sharing the full story. Soon.
SO ANYWAY I’m here instead to share a PSA with anyone who loves seafood and/or lives with a landlocked boyfriend with a taste for SoCal fish tacos.
Brandon lived in Southern CA for 6 months for work a few years ago, and one of the highlights of his short residence was eating Rubio’s fish tacos for lunch a few times a week. The man really takes his fast food lunch choices seriously. He still has a pretty solid Wendy’s routine locked in to this day.
I tried Rubio’s back then during a visit (I used to visit Brandon back when I was still in college – I didn’t have class on Fridays and would get to lay around his apt all day during my long weekends while Brandon slaved all day and would come meet me for lunch. Colleeeegggeee.) and it really is that good. I had it again on one of my recent trips to California for work, and had such a good meal I craved more delicious fish tacos all the way back to MN.
I’m such a such a great gf that upon my return, I made a surprise stop at the grocery store on my way home to whip up a copycat fish taco meal based on this recipe at The Shiska in the Kitchen. Totally selfless act of love, mmmhmmmm. We Wisconsin peeps looove fish fry, and a good fish taco is a spicy twist on an old fave. We used cod for the recipe and it turned out SO well.
I even got the seal of approval from Brandon – these taste just as good as the real thing so bust out the deep fryer or open the windows wide and get some oil sizzling and TRY THESE!!! and let me know what you think!
