Brandon loooooves Shore Lunch fish batter. If any of you don’t know, fish fry is a bonafide THING in Wisconsin and we both love it. Going out for Friday fish is a likely event every time we head to our hometown, and when the mister figured out we could fry up a decent version ourselves in a little bit of oil on the stove, it was ON. He drools over the walleye in the seafood cooler every time we grocery shop together but damn – walleye is expensive! So we like to try lots of different kinds of fish, and Brandon always likes his fried.

I usually broil mine with a little olive oil while his portion sizzles in the pan – I can take on an all you can eat fish fry no problem, but try to save it for the really good stuff. You know, out of restaurant deep fryers. Last night, we defrosted a couple tilapia fillets that we had bought on a buy-one-get-one sale, totaling about $6 for a pound of fish. I was feeling something different than my usual broiling technique, so I consulted the Kitchen Bible: How to Cook Everything. It was a gift from my parents a few Christmases ago and I consult it at least once a week.

After Mark Bittman shat all over our grocery choice:

I decided to take his advice on an alternative breading for baked breaded fish – rice cereal. I had brown rice crisp cereal (Whole Foods brand), which I crushed up in a plastic bag, then mixed in a bowl with a generous sprinkle of Trader Joe’s 21 Spice Salute. Then, in a separate bowl, I scrambled up an egg. 1) Coat fish fillet in egg. 2) Dredge fish fillet in breading of choice (Shore Lunch for manfriend, brown rice cereal crispy coating for moi). Then, while Brandon’s fillet fried in hot sunflower oil in a skillet, I baked my fillet at 450* in a baking pan with just a spritz of oil oil spray for a little over 15 minutes.

SO GOOD! I loved how the rice crisp cereal made the breading crunchy, and coating the fillet in egg helped the seasoning really soak into the fish, too. Mark Bittman can say what he wants, it was a pretty successful tilapia if I do say so myself. Brandon liked his fish too, obviously. Direct quote: “You could pretty much cover a turd in Shore Lunch and fry it up and I would think it was good.” Nice, babe. Reaaaal nice.

Here is my non-turd dinner in its entirety – delicious, healthy, baked crispy breaded fish, mashed baby reds topped with Chobani, and mixed greens with some Green Goddess dressing.

So… remember how posting monthly goals was one of my New Year’s resolutions? I’m sure you don’t remember because I sure didn’t. I last posted goals for February during a week where I was feeling pretty negative – here they are:

Stick to my half marathon plan. It’s getting important now.
I’m doing a good job on this one! I ran 6 miles yesterday and felt like I could run at least another mile, no problem. I have been slacking pretty badly on a weekly stretch or yoga sessions and I have missed a strength session here and there, but I have been doing three runs a week no excuses. So far, I feel like I’m going to be ready for my race on May 6, and I’m definitely accomplishing my goals of getting back into a consistent workout routine and getting myself fit enough to finish the race. As I get better and better at running, I’ve been wondering if I should set a time goal for myself, but I’m going to keep this first half marathon fun by aiming to enjoy myself and make it to the finish and hopefully sign up for some more races soon.

Go to bed earlier. Hope this results in waking up earlier.
LOLZ. Nope. Going to keep trying… Brandon has been on a really good schedule of getting to bed around 9 the past week while I’ve been traveling, so I’m going to try to get myself on his schedule. 9:00 bedtime is crazy early for this night owl, but shooting for 10 pm is realistic. I say this as I am typing this post at midnight because I slept for my entire 2 hour flight this morning and now am not tired…  I blame switching between Pacific, Central and now Eastern time zones in the last week. Right, that’s it, definitely the time zone.

I was a major crankypants when I wrote these goals back in the beginning of February. There are still a lot of stressful things happening behind the scenes with Brandon’s and my personal lives/families/work but that’s life, and I remind myself that all I can control is my reaction. I would say I have definitely been in a more positive mindset lately. I have also decided to keep the blog around and not act like a stressed out freak about something that is fun. It helps me remember to reflect on the things that make me happy and feel grateful – keeping it was a good decision!

In a nutshell, my goals were to get my life on a healthier and happier groove – done. I feel good about my upcoming half marathon and I’m feeling positive, especially with the weather getting so warm! Now that I’m out of my funk, here are some more ambitious goals for the rest of March and April:

Continue to stay true to my half marathon training plan – do not skip yoga!
Now that my distances are getting a little longer (7 miles this Sunday! Eeee!) the stretching is going to be even more important. No more skimping.

Finish A Game of Thrones
I’m almost halfway through the book and reallyyyy really liking it. I have heard the show is really entertaining but I always like to read the book before watching the movie/TV show version when I can. I actually can’t wait to spend some more time reading this book – just need to set aside a little time for it!

Plan a birthday trip for the boyfriend’s birthday
Brandon’s birthday is May 11 and we have talked about a few different trips – Toronto, Vegas, and most recently, we have been trying to put together a trip to Washington, DC. A few of his best friends live nearby, and I’ve never been to our nation’s capitol and REALLYYY want to visit. I can’t wait to do all the touristy things and to see Brandon’s friends, who I haven’t seen in forever.

Do 1 run per week in the morning
Yep, this is yet another thinly veiled attempt at tricking myself to get up earlier and go to bed at a normal time.

Work on the blog!!
I’m hoping to set aside an entire DAY sometime in the next month or so to do some major blog work. I have a new domain name I want to move to, a redesign in mind, some links to take down (*ahem* workout tracker), and some blog homework to do, like resizing all the massive images I’ve uploaded.

That’s a lot of goals… but I am feeling energized by the start of spring and can’t wait to do some work!

(Our new fun spring accessories – Bahama Breeze candle which I continue to call “Bahama Mama” because I can’t get it out of my head/remember the actual scent and the CUTEST carrot-shaped Easter eggs. Brandon already ate all the candy. Edited to add – I can’t believe I forgot to say that my grandma got these for us!! Isn’t she the best? Thanks gma :)  )

Happyyyyy New Year! Okay, I’m a couple days late to the party Smile We were busy having a crazy amount of fun with friends on New Year’s Eve – we did fondue -

and since then we’ve been cleaning up from the fondue, enjoying new Christmas presents… oh, and I’m in heaven because I haven’t had to travel for work in almost two weeks! Great start to the New Year.

Another way to give the New Year a kickstart was putting together an inspiration board. I got the idea from Gina at The Fitnessista – I’ve been eyeing hers since I started reading her blog, and was excited to indulge in a little arts and crafts time to get one together for 2012. I didn’t make the deadline to submit my inspo board to Gina’s site, but I wanted to share it here. I’ll warn you.. I’m not the craftiest person.. but if you’ve read my blog, you know I’m all about setting goals as a means of motivation, and who doesn’t like playing with scissors and glue once in awhile?

A lot of people don’t like setting resolutions on January 1st for various reasons – it can create a lot of pressure to start a lot of big goals at once that fizzle out quickly, it’s cliché, January shouldn’t be the only time to set goals… name a reason! I think if you set New Year’s resolutions – more power to you! (I love Caitlin at Healthy Tipping Point’s ode the the January joiners – any motivation is good motivation!) Plus.. I’m really just a goals geek. Any excuse to talk about big dreams is a win in my book. My inspiration board combines what I have decided are the most important goals and motivational themes I have set for myself over the past few months with a few new intentions for the year ahead. - Wake up earlier. Wanna hear something sad? This was my New Year’s Resolution last year. The only one. And I failed at it. It’s on the board this year because my schedule has gotten so much crazier now that I’m not a student, and I recognize I need to dedicate more time to what’s important to me. Mornings are the time, now I just need to learn not to hate them.

- Travel to new places. B & I want to take a long weekend together sometime this year, and I have friends allll over the place who I would L-O-V-E to visit. I’ve got some frequent flier miles saved and a few leftover days off set aside. I’ve never been one to make travel a huge priority, but I’d love to take advantage of the opportunities I foresee cropping up this year!

- Read 20 books. Pretty ambitious. In 2010, I read 15 books. In 2011, I read 11. Key to this goal is reading material with some variety, including 5 books on health/fitness. I read a lot for work, so I want to fit some just-for-fun stuff in there, too.

- Volunteer

- Set monthly goals (on da blog Winking smile)

- Blog 3x per week and re-design my blog: I started this blog as a kind of goofy project during my last year of college as a way to stay motivated in health and fitness, share what is going on in my life with friends and family, and hopefully make a positive impact on anyone who stops by to say hello. Somehow along the way, I got really attached to the ol’ bloggy, but I’m not 100% proud of everything that’s here. I have soo many fun ideas of things to share and ways to present thoughts and fun projects for you to try, and I’ve been struggling with spending enough time on the blog to get that excitement across. Gonna work on it.

- Pay off goal loan: I’ve mentioned a couple times that I have student loans, which I am attempting to pay down aggressively. I’m proud to say I’ve already paid off almost 13% of my balance before even going into repayment, and I have one loan left that I am targeting by my birthday this year. Watch out, you evil debt!

- Explore Minneapolis. In addition to travel, B & I have talked about having more adventures in our own back yard – both Minneapolis and St. Paul have amazing restaurants, theatres, museums and sightseeing, and we have yet to see most of it!

- Do yoga. No times per week or per month here, just try to do it more.

- Make more $

- Be a better… employee, creative (future) businessperson, writer, blogger, motivation to myself & others, daughter, sister, girlfriend, friend, and community member. I don’t want to be Superwoman, I just want to remain mindful of all the roles I take on in life.

- Train for the Lake Minnetonka Half Marathon. I actually signed up today. Holy crap. Getting a real training plan together is my mini-goal for the week, as well as getting my muscles woken up to prepare for the craziest fitness goal I’ve ever taken on. May 6. It’s coming.

That’s it! (? it?! am I crazy?!) These goals are definitely lofty and aspirational but I’m going to give them my best shot – I’m looking forward to 2012 as my first full year as a “grown up”, and I’m determined to make it the best year yet. Did you make any goals for the New Year?

Hi friends – last night in Memphis for me tonight so it’s a great day :) Work is still exciting and new but deep down, I think I’ll always be a homebody. This is also the first week I’ve done Tuesday through Friday (rather than Monday through Thursday) so it kinda felt like I should have been going home today, when I really have another day of work tomorrow before I can fly home and see my man-friend. The amount of Chalene and TurboFire in my life today makes it a great day, too. I was seriously pooped after a long day of work and viewing Captain America with the coworkers last night (it’s nice to do fun stuff together to break up a long week away from home :) ) and skipped out on Turbo yesterday. I made up for it today by doubling up – I did Fire 45 this AM and Core 20/Stretch 40 this evening. Fire 45 is officially my fave Fire workout so far - I really just like when Chalene yells BOOM I GOT YOUR BOYFRIEND! Haha… I wanted to post a vid, but the YouTubes of this are pretty random. Search “TurboFire Fire 45″ if you are curious :P The Stretch 40 class is the closest I’ve gotten to yoga in awhile and my body is still soaking in the post-stretch nirvana…. even if my yoga fix was on a hotel towel on my icky hotel floor. Gotta make it work!

My quest to eat vegetarian lunches this week is failing miserably. So far this week I’ve had a turkey sandwich (Monday during a meeting at work – hey, it was free!), a cheese quesadilla with refried beans (okay – vegetarian but not exactly the picture of health. And this was one of the best choices on the menu… lunches are a challenge, okay?), a roasted chicken salad from Arby’s (such a sad salad. It was actually depressing to eat that pile of iceberg.) and more Mexican today – chicken fajitas and about a zillion chips. Sigh. I have really been trying to choose the healthiest options, but so far it’s been a lot a lot of depressing salads or so-so, questionably healthy items from non-healthy restaurants. I’m thinking next week I might experiment with packing up a bunch of healthy snacks for the day and just eating something small at lunch or ordering a drink – I’ll think on it and let ya know.

So I talk a lot about my workouts around here, but the past month or so I’ve also been trying to work on what goes on in my head. I’m currently re-reading The 7 Habits of Highly Effective People by Stephen R. Covey.

The book is a framework of habits that build on one another, which help you clarify your goals and align yourself to a “true north” of your inner values and principles. Habit #1 is Be Proactive, and the author challenges you to spend 30 days concentrating on what is within your circle of influence. “Anytime we think the problem is ‘out there,’ that thought is the problem.” The idea is if you want improvement in your life, focus on the one thing you have absolute control over – yourself and your thoughts. I highly recommend reading the book  - I actually have read it before, in high school, and I’m getting even more out of it the second time around. It’s been recommended to me many, many times from people in my personal life, school and work – it’s a good one! But even if you aren’t interested in reading it, I challenge you to take the 30 day challenge of being proactive.

How often do you use and hear phrases such as “If only,” “I can’t,” or “I have to”?

The challenge is to move away from this – rather than “I have to be in Memphis all week for work”, “I have the opportunity to use this time away from home to focus on different interests.” Rather than “I’ll be happier when I don’t have so much to do”, “I can find ways to use my time more effectively.” Not, “If only I had more money” but “I have the vision and energy to build a great future for myself.” You get the idea – rather than putting the blame out there – find something within that you have the power to change. “Common sense”? Maybe. But be mindful about this every day and I promise you will look at each day in a more positive light.

Make a promise to yourself and keep it, and see how good it makes you feel :)

My parents are visiting this weekend, so I’m out probably til Sunday – have a great weekend everybody and be happy :)
