This weekend was a whirlwind! B and I were both traveling for work ’til Friday, so it was an quick shift to relaxation mode as soon as I got home from the airport Friday night and we’ve been chillaxin ever since
My parents came to visit us this weekend – they were on the tail end of a sweet road trip to Michigan, across Wisconsin, then to visit us in the Cities before heading back home. It was the first time they’ve been able to see our apartment in real life, and it was fun to experience downtown with them. We ate *the best* food all weekend.
The Salad Bar of Wonders at Fogo de Chao – SO delicious. My favorite was the aged parmesan and artichoke hearts. My dad & B went to TOWN on the 12(?) different fire-roasted meats they offer there, while my momma and I were in veggie heaven on the seriously huge salad bar. I didn’t think their plates heaped with meat were quite so photogenic – hehe – but they boys couldn’t stop raving about their food. It’s a little bit pricey/special occasion-y, but the food is seriously worth it.
On Saturday night, we cooked in at the apartment. B made this seriously incredible salmon covered in lemons in the oven – a little black pepper and Trader Joe’s 20 Spice Salute for seasoning, 16 minutes at 350*. My mom said “The salmon was the best food we had all weekend!” – he’s a keeper
I pitched in with some Greek Quinoa Avocado Salad (I can’t get enough!) and some parmesan roasted broccoli (roasted for 18 minutes at 425* with some lemon juice sprinkled on top, an additional 5 minutes in the oven after sprinkling with cheese. The trick with roasted veggies is to make sure they’re *dry* before you put them in the oven

And sweet corn, too! I’ve lost count how many ears that is for the summer! (this picture cued my dad – “Picture for the blog, eh?” Haha.)
I’m about to go throw my Kindle and some finishing touches into the carry-on for my 6:30am-er tomorrow, and get a breakfast cookie ready for myself to dream about til my 4am wake-up
